Roasted sweet potatoes topped with caramelized onions, red peppers, and a creamy dollop.
Ingredients:
  • 2 sweet potatoes
  • 1 tablespoon olive oil
  • 2 red bell peppers, thinly sliced
  • 1 sweet onion, thinly sliced
  • 0.25 cup fat-free sour cream
Instructions:
  • Preheat the oven to 450 degrees F (230 degrees C. Scrub and dry the sweet potatoes, then prick them with a fork and place on a baking sheet. Bake until easily pierced with a fork, for 50 minutes to 1 hour.
  • In a large skillet over medium heat, warm the oil. Add the onion and bell pepper; sauté until the onion is soft and translucent, about 5 minutes. Lower the heat to medium-low and keep cooking until the onion is very tender and caramelized, for another 20 to 30 minutes.
  • Open up the tender baked sweet potatoes and generously dress them with the flavorful onion mixture, seasoning with salt and pepper, then finish with a creamy dollop of sour cream.
