Spicy rub-smoked pork ribs slow-cooked to tender perfection, and glazed with sweet BBQ sauce.
Ingredients:
  • 0.25 cup salt
  • 0.25 cup white sugar
  • 2 tablespoons packed brown sugar
  • 2 tablespoons ground black pepper
  • 2 tablespoons ground white pepper
  • 2 tablespoons onion powder
  • 1 tablespoon garlic powder
  • 1 tablespoon chili powder
  • 1 tablespoon ground paprika
  • 1 tablespoon ground cumin
  • 10 pounds baby back pork ribs
  • 1 cup apple juice
  • 0.25 cup packed brown sugar
  • 0.25 cup barbeque sauce
Instructions:
  • Assemble all your ingredients.
  • Mix together a blend of salt, white sugar, brown sugar, black pepper, white pepper, onion powder, garlic powder, chili powder, paprika, and cumin in a small bowl to season the ribs.
  • Massage the spice mixture onto the ribs, then wrap them in plastic and refrigerate for a minimum of 30 minutes.
  • Combine apple juice, brown sugar, and barbecue sauce, stirring until fully mixed. Set aside.
  • Prepare the ribs by unwrapping them and laying them out in a single layer on the smoker's wire racks. Fill the smoker pan with your choice of apple, grape, pear, or cherry chips, then preheat the smoker to 270 degrees F (130 degrees C). Smoke the ribs for 1 hour.
  • Brush ribs generously with the delicious sauce. Slow cook the ribs for 3 to 4 hours, basting with sauce every 30 to 40 minutes, until the meat is tender and starts pulling back from the bones.
  • Brush the savory sauce onto the ribs one final time, then take them out of the smoker. Wrap the ribs securely in aluminum foil and let them rest for 10 to 15 minutes, allowing the juices to reabsorb into the tender meat.
