Vibrant citrus twists with matcha and turmeric for a unique burst of flavor.
Ingredients:
  • 0.5 cup butter, softened
  • 0.5 cup sugar
  • 1 large egg white
  • 1.5 cups flour
  • 1 teaspoon lime zest
  • 0.25 teaspoon matcha powder
  • 1 teaspoon lemon zest
  • 0.25 teaspoon turmeric
  • coarse sugar for decorating
Instructions:
  • In a large bowl, combine butter, sugar, vanilla, and salt. Use an electric mixer on low speed for about 30 seconds until ingredients start to blend. Increase speed to medium and beat until the mixture becomes fluffy, light, and sticks to the sides of the bowl. Remember to scrape down the sides of the bowl.
  • Incorporate the egg white into the mixture, then add flour and mix at low speed until mostly combined, around 30 seconds. Increase to medium speed until dough forms.
  • Separate the dough into 2 bowls. Incorporate lime zest and matcha powder into one portion for vibrant green dough, and mix lemon zest and turmeric into the other portion for sunny yellow dough.
  • Roll dough into individual balls and wrap them snugly in plastic wrap. Let them chill for about 1 hour, until they are easy to work with.
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare a baking sheet by lining it with parchment paper.
  • Divide the dough into 16 pieces and roll each into a 5-inch rope. Twist a green and yellow rope together, then coil into a spiral shape, tucking the ends under and pressing to seal. Place on the baking sheet. Repeat with the remaining dough. Space the cookies about 1 inch apart on the baking sheet and sprinkle with sparkling sugar.
  • Bake the cookies until they are delicately golden on the edges for about 10 minutes. Allow them to cool on the baking sheets for 5 minutes, then transfer them to a wire rack to completely cool. Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
