Swiss Cheese Soufflé Bread

Savory homemade bread infused with garlic and Swiss cheese flavors.
Ingredients:
  • 1 1/3 cups Gold Medal™ all-purpose flour
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1 package regular active or fast-acting dry yeast
  • 1/3 cup butter or margarine
  • 1/4 cup water
  • 1/4 cup milk
  • 1 egg
  • 1 cup shredded Swiss cheese (4 oz)
  • 1 clove garlic, finely chopped
  • Butter or margarine, softened
  • Grated Parmesan cheese, if desired
  • Freshly cracked pepper, if desired
Instructions:
  • Combine 1 cup of flour, sugar, salt, and yeast in a medium bowl. In a 1-quart saucepan, warm 1/3 cup butter, water, and milk over medium heat, stirring frequently, until very warm (120°F to 130°F). Pour the mixture over the flour and beat with an electric mixer on low speed for about 30 seconds until blended. Then, beat in the egg on medium speed for 3 minutes, scraping the bowl occasionally.
  • Incorporate the rest of the flour, Swiss cheese, and garlic into the mixture. If the dough is too sticky, mix in 1 to 2 tablespoons of additional flour. Cover and allow the dough to rise in a warm place for about 45 minutes or until it doubles in size.
  • Prepare the 1-quart casserole by greasing it with shortening or cooking spray. Stir down the dough and shape it into a ball. Transfer the dough into the casserole. Brush the top with softened butter, then sprinkle with Parmesan cheese and pepper. Cover and allow it to rise in a warm place for about 35 minutes, or until the dough has doubled in size. If using fast-acting yeast, skip the 35-minute rise and instead cover the casserole and let it rest on a floured surface for 10 minutes.
  • Preheat oven to 375°F. Bake the loaf for 30 to 35 minutes until it is golden brown and makes a hollow sound when tapped. If it browns too quickly, loosely cover with foil during the last 15 minutes of baking. Remove from casserole and place on a cooling rack. Serve warm.
