Swiss cheese stuffed chicken with chickpea tabouli

Cheesy chicken seared, then baked to perfection for irresistible melt-in-your-mouth goodness.
Ingredients:
  • 4 (about 150g each) single chicken breast fillets, excess fat trimmed
  • 4 slices Swiss cheese, halved
  • 340g (2 cups) bought tabouli
  • 1 x 400g can chickpeas, rinsed, drained
Instructions:
  • Preheat the oven to 180°C. Line a baking tray with non-stick baking paper. Slice a deep horizontal pocket into each chicken breast and stuff each with cheese, securing with a toothpick.
  • In a large frying pan over medium-high heat, heat the oil until shimmering. Sear the chicken for 1-2 minutes on each side until golden. Transfer the chicken to a prepared baking tray and bake for 10 minutes until fully cooked.
  • Mix the tabouli and chickpeas together.
  • Plate the tabouli mixture and chicken separately on serving plates.
