Try these quick and scrumptious apricot mustard chicken cheese sandwiches for a delicious 10-minute dinner.
Ingredients:
  • 8 slices hearty Italian bakery bread
  • 1/4 cup apricot preserves
  • 1 package (9 oz) thin-sliced cooked chicken breast
  • 4 slices (3/4 to 1 oz each) cheese
  • 8 teaspoons Dijon mustard
  • 3 tablespoons butter, softened
Instructions:
  • Spread 1 tablespoon of preserves on one side of each of 4 bread slices. Layer with chicken and cheese. Spread 2 teaspoons of mustard on one side of each of the remaining 4 bread slices. Place slices, mustard side down, on the cheese.
  • Heat 1 tablespoon of butter on a griddle or 12-inch nonstick skillet over medium heat. Place sandwiches in the skillet and spread the tops of the bread with the remaining 2 tablespoons of butter. Cook for 6 minutes, turning once, until the cheese is melted and the bread is golden brown.
