Swiss Sauerkraut Casserole

Creamy Swiss cheese and canned cream of chicken soup create a delicious sauce for a flavorful ground beef and noodle casserole.
Ingredients:
  • 8 oz uncooked egg noodles
  • 1 1/2 lb lean (at least 80%) ground beef
  • 1 small onion, chopped (1/4 cup)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 can (32 oz) sauerkraut, undrained
  • 2 cans (10 3/4 oz each) condensed cream of chicken soup
  • 2 cups shredded Swiss cheese (8 oz)
  • Chopped red onion, if desired
Instructions:
  • Preheat oven to 350°F. Follow package instructions to cook and drain noodles.
  • While the noodles are boiling, sauté the beef, onion, salt, and pepper in a medium skillet over medium heat for 8 to 10 minutes, stirring occasionally, until the beef is browned; then drain the excess fat.
  • Combine the noodles, beef mixture, sauerkraut, soup, and 1 cup of cheese in a 3-quart casserole dish without greasing it.
  • Bake uncovered for 45 minutes. Sprinkle with 1 cup of cheese, then bake for an additional 5 to 10 minutes until the cheese is melted. Finish by sprinkling with red onion.
