Tender round steak cooked slowly with tomatoes, bell pepper, and onion for a flavorful main dish.
Ingredients:
  • 0.25 cup all-purpose flour
  • 0.25 teaspoon ground black pepper
  • 1 (2 pound) beef round steak, 1 inch thick
  • 2 tablespoons vegetable shortening
  • 0.25 cup water, or as needed
  • 1 (8 ounce) can diced tomatoes
  • 1 onion, minced
  • 0.5 green bell pepper, chopped
  • salt and ground black pepper to taste
Instructions:
  • In a bowl, combine flour, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Coat round steak pieces with half the flour mixture, pounding until absorbed. Repeat on the other side with the remaining flour mixture, pounding until absorbed. Cut the steak into 6 pieces.
  • Heat shortening in a large skillet over medium heat until melted, then add steak pieces. Sear until golden brown on each side for 7 to 10 minutes. Cover and gently simmer for about 1 hour until tender, adding water if necessary.
  • Flip the steak pieces and introduce tomatoes, onion, and green bell pepper to the skillet. Season generously with salt and black pepper. Let simmer until vegetables are tender, approximately 30 minutes.
