Tender top round steak slow-cooked in savory tomato sauce, perfect for feeding a crowd. Classic Swiss steak for the whole family.
Ingredients:
  • One 2 to 2 1/2 pound round or top round steak, about an inch thick
  • 2 tablespoons of flour
  • Kosher salt and freshly ground black pepper
  • 1 onion, roughly chopped
  • 1 clove garlic, chopped
  • 2 cups puréed tomatoes (canned or fresh)
  • 2 teaspoons each of fresh thyme, sage, marjoram, or 1/2 teaspoon each of dried
  • Vegetables such as potatoes, carrots, or green beans, optional
Instructions:
  • Coat both sides of the steak with flour, then season generously with salt and pepper. Heat 2 tablespoons of oil in a wide, shallow pan over medium-high heat. Sear the steak for about 10 minutes per side until browned.
  • Transfer the steak out of the pan and reserve. Saute the onions and garlic in a tablespoon of oil for 3 to 5 minutes, incorporating any steak drippings from the pan with a metal spatula. Introduce half of the herbs to the onions.
  • Place the steak back in the pan over the onions, surround it with onions. Sprinkle thyme, sage, and marjoram on top of the steak. Pour the tomato purée into the pan.
  • Simmer with a tight-fitting lid: Cover the pan with a domed lid to circulate steam and keep the steak moist. Bring the steak in the tomato purée to a simmer, then lower the heat to maintain a low simmer for 1 1/2 hours.
  • Prepare the vegetables: While the steak cooks, lightly steam 4 small russet potatoes, peeled and quartered, along with 2 carrots, quartered lengthwise and chopped into 2-inch pieces, for 5-10 minutes. Then, after 1 1/2 hours of cooking the steak, flip it, add the pre-cooked potatoes and carrots to the pan, bake covered for an additional 30 minutes. Pre-cooking the vegetables ensures they cook evenly alongside the steak at a gentle heat.
  • After a total cooking time of 2 hours, test the steak by poking it with a fork to ensure it is tender. Once done, transfer the steak to a carving board and slice it. Pour the sauce over the sliced steak. Feel free to rate and review this recipe if you enjoyed it!
