Experience the irresistible essence of Mezze with this delicious grazing recipe.
Ingredients:
  • 55g (1/3 cup) fine burghul (see note)
  • 2 bunches flat-leaf parsley
  • 1 small bunch mint, leaves picked
  • 1 large vine-ripened tomato, cut into 1cm pieces
  • 2 spring onions, finely chopped
  • 2 lemons, juiced
  • 80ml (1/3 cup) olive oil
Instructions:
  • In a bowl, soak burghul in cold water until softened, for about 1 hour. Drain in a sieve, press with a spoon to remove excess moisture, then discard liquid.
  • First, remove and discard the ends of the parsley stalks, keeping the leaves. Finely chop the parsley and mint and add them to a big bowl along with the burghul and tomato. In a separate small bowl, mix the onions, 1/2 teaspoon salt, and 1/4 teaspoon pepper by hand. Combine this mixture with the parsley and mix well. Lastly, add lemon juice and oil, and give it a good stir. Voila, you have 4 cups of this flavorful dish ready to enjoy!
