Ingredients:
  • 2 x 250g punnets cherry tomatoes, quartered
  • 2 eschalots, finely chopped
  • 20.00 ml balsamic vinegar
  • 20.00 ml red wine vinegar
  • 36.40 gm extra virgin olive oil, plus extra to drizzle
  • 40.00 ml finely chopped flat-leaf parsley, plus extra roughly chopped to serve
  • 500g egg tagliatelle
  • 200g soft goat’s cheese, crumbled
Instructions:
  • In a bowl, combine tomatoes, eschalots, vinegars, oil, and parsley. Season with salt and pepper, then let it marinate while you cook the pasta according to package instructions in a pot of boiling salted water. Drain the pasta.
  • Add the pasta back to the pan with the tomatoes and gently mix over low heat briefly. Portion into bowls, drizzle with oil, and then garnish with cheese and additional parsley before serving.
