Satisfying tahini oatmeal cookie with coconut and almonds, nutty and rich, perfectly balanced sweetness.
Ingredients:
  • 2.25 cups all-purpose flour
  • 0.75 cup brown sugar, packed
  • 0.75 cup white sugar
  • 0.5 cup tahini
  • 0.25 cup honey
  • 1 tablespoon ground cinnamon
  • 1 cup coconut
  • 1 cup rolled oats
  • 0.75 cup sliced almonds
Instructions:
  • Preheat your oven to 375°F (190°C) for the perfect baking temperature.
  • In a bowl, combine flour, baking soda, and salt. In a separate large bowl, use an electric mixer to cream together butter, brown sugar, white sugar, tahini, honey, and ground cinnamon until smooth. Add eggs and mix well. Slowly incorporate the flour mixture until just combined. Fold in coconut, oats, and almonds. Drop spoonfuls of dough onto ungreased baking sheets, spacing them 2 inches apart.
  • Bake until edges turn golden, around 9 to 11 minutes. Let cool on baking sheet for 1 minute, then transfer to wire rack to fully cool.
