Tahini crackle biscuits

Indulge in gluten-free tahini crackle biscuits - sweet, nutty, and perfect with tea.
Ingredients:
  • 155g (1 1/2 cups) almond meal
  • 22.40 gm coconut flour
  • 1.25 gm bicarbonate of soda
  • 150g (1/2 cup) tahini
  • 80ml (1/3 cup) honey
  • 55g (1/3 cup) sesame seeds
Instructions:
  • Preheat your oven to 180C (160C fan forced) and prepare 2 baking trays by lining them with baking paper.
  • In a large bowl, mix together almond meal, coconut flour, bicarb, and cinnamon. Stir in tahini and honey until thoroughly combined. Place sesame seeds in a separate bowl.
  • With moist fingertips, shape 2 teaspoonfuls of the tahini mixture into a ball, coat with sesame seeds, place on a tray, and gently press to slightly flatten. Repeat with the rest of the tahini mixture.
  • Bake the biscuits for 12 minutes or until golden. Then, let them cool completely on the trays.
