Upgrade classic brownies with a swirl of rich tahini and a hint of toasted sesame oil for a decadent and fudgy treat.
Ingredients:
  • 5 tablespoons tahini, divided
  • 1 tablespoon maple syrup
  • 1 teaspoon toasted sesame oil
  • 1 1/4 teaspoons kosher salt, divided
  • 3 ounces unsweetened chocolate, roughly chopped
  • 6 tablespoons (85g) unsalted butter
  • 1 1/3 cups (267g) sugar
  • 2 large eggs
  • 2/3 cup (80g) all-purpose flour
  • Flaky salt, for garnish (optional)
Instructions:
  • Preheat the oven to 350°F and prepare an 8x8-inch baking dish by lining it with parchment paper.
  • Prepare the tahini mixture: In a small bowl, whisk together 3 tablespoons of tahini, maple syrup, toasted sesame oil, and 1/4 teaspoon of salt. Set aside.
  • Prepare the brownie batter: Use a heatproof bowl placed over a saucepan with water, ensuring the bottom of the bowl doesn't touch the water. Melt chocolate, butter, and 2 tablespoons tahini over medium heat, stirring often. Once melted, remove from heat and stir until smooth. Add sugar, then whisk in eggs one at a time. Mix in vanilla, 1 teaspoon salt, and fold in flour until smooth.
  • For the brownies: Transfer the batter to the baking dish. Drop small spoonfuls of tahini mixture on top, then swirl it into the batter using a toothpick. If desired, sprinkle flaky salt on top. Bake until a toothpick inserted in the center comes out clean, about 28 to 30 minutes.
