Golden-brown Taiwanese pork chops marinated in five-spice and soy, pan-fried to perfection.
Ingredients:
  • 4 (3/4 inch) thick bone-in pork chops
  • 2 tablespoons soy sauce
  • 1 tablespoon minced garlic
  • 1 tablespoon sugar
  • 0.5 tablespoon white wine
  • 0.5 tablespoon Chinese five-spice powder
  • vegetable oil for frying
  • cornstarch
Instructions:
  • Using a sharp knife, make small slits near the edges of the pork chops to prevent curling while frying.
  • In a large resealable plastic bag, mix together soy sauce, garlic, sugar, white wine, and five-spice powder. Add chops to the bag, seal tightly, and massage gently to coat them with the marinade. Refrigerate for at least 1 hour, flipping the bag occasionally.
  • Heat a generous amount of vegetable oil in a large skillet. Take the chops out of the bag without removing the marinade. Dust both sides of the chops lightly with cornstarch.
  • Add the chops to the skillet with care, cook until golden brown on both sides, and fully cooked. Ensure an instant-read thermometer registers at least 145 degrees F (63 degrees C) when inserted into the center.
