Make a savory Japanese rolled omelette, tamagoyaki, with soy sauce, mirin, and dashi for an authentic dish.
Ingredients:
  • 4 tablespoons prepared dashi stock
  • 1 tablespoon white sugar
  • 1 teaspoon mirin (Japanese sweet wine)
  • 0.5 teaspoon soy sauce
  • 0.5 tablespoon vegetable oil
Instructions:
  • In a bowl, combine eggs, dashi stock, sugar, mirin, and soy sauce, and whisk until smooth.
  • In a large nonstick skillet over medium-high heat, heat a third of the oil. Pour in one-third of the egg mixture and swirl the pan to evenly coat the bottom. Roll up the omelette from one side to the other once it is set.
  • Place the skillet on the stove, then pour another 1/3 of oil and add 1/3 of egg to the pan. Swirl the pan to evenly coat the bottom, making sure to cover around and under the first roll. Cook until the egg is set. Roll up the omelette starting from the side with the first roll, moving it to the center.
  • Continue by repeating the same procedure with the remaining oil and egg. Then, carefully transfer the rolled omelette to a bamboo rolling mat. Roll it tightly and let it cool for a few minutes.
  • Slice the omelette into 6 pieces and enjoy warm or cold.
