20-minute tangy black bean quesadillas with tuna, sour cream, and Mexican cheese for a satisfying meal.
Ingredients:
  • 2 (5 ounce) cans tuna, drained
  • 0.5 cup refried black beans
  • 0.5 cup low-fat sour cream
  • 0.5 cup canned sweet corn, drained
  • 2 tablespoons hot buffalo wing sauce
  • 1 tablespoon garlic salt
  • 1 teaspoon ground cumin
  • 1 tablespoon butter, divided
  • 4 (9 inch) tortillas whole-wheat tortillas
  • 0.5 cup shredded Mexican cheese blend, divided
Instructions:
  • Combine tuna, black beans, and sour cream in a large bowl, then fold in corn, buffalo wing sauce, garlic salt, and cumin.
  • In a large skillet over medium heat, melt half of the butter. Heat 1 tortilla in the melted butter for 1 minute, then flip. Spread half of the tuna mixture on the tortilla. Sprinkle with half of the Mexican cheese and cover with another tortilla. Cook covered for 1 minute.
  • Flip the quesadilla and let it cook for 1 to 2 minutes until the cheese is melted. Continue with the rest of the ingredients, then slice the quesadilla into eighths and serve each guest half a quesadilla.
