Delicious orange muffins, ideal for a quick breakfast or snack.
Ingredients:
  • 1 cup quick cooking oats
  • 1 cup all-purpose flour
  • 0.25 cup white sugar
  • 2 teaspoons baking powder
  • 0.25 cup raisins
  • 1 egg
  • 3 tablespoons grated orange zest, or to taste
  • 3 tablespoons canola oil
  • 1 cup milk
  • 3 tablespoons orange juice
  • 1 tablespoon white sugar
Instructions:
  • Preheat your oven to 400°F (200°C) and prepare a muffin tin by greasing the cups or lining them with paper liners.
  • Combine oats, flour, 1/4 cup sugar, baking powder, and raisins in a bowl; set aside. In a separate bowl, beat the egg with orange zest and canola oil, then whisk in the milk. Stir in the flour until just combined. Divide the batter evenly among the muffin cups.
  • - Bake in the preheated oven for about 20 minutes until a toothpick comes out clean. - Remove the muffins from the oven. - Combine the orange juice and 1 tablespoon sugar until sugar dissolves. - Drizzle 1 teaspoon of the mixture over each muffin. - Take the muffins out of the tin and let them cool slightly before serving.
