Ingredients:
  • 425g canned tuna
  • 100.00 gm brown rice or white rice
  • 2 tomatoes, sliced
  • 225g canned pineapple
  • 1 small onion, chopped
  • 60.00 gm butter
  • 250.00 ml peas
  • 30.00 ml plain flour
  • 386.25 gm milk
  • 1/2 tsp cayenne pepper
  • 250.00 ml tasty cheese, grated
  • 125.00 ml flat-leaf parsley, finely chopped

Instructions:
  • Preheat the oven to 180C.
  • Prepare the rice following the directions on the package.
  • Brown the onion in a saucepan, then remove and set aside.
  • In the same pan, melt the butter, then add the flour and salt, cooking for 1 minute. Slowly pour in the milk while stirring constantly. Mix in the onion and cheese, stirring for another minute. Set aside the delicious cheese sauce.
  • Take a casserole dish and mix together the cooked rice, parsley, and cayenne pepper. Ensure the mixture is evenly spread along the bottom of the dish.
  • Create a vibrant layer by arranging sliced tomatoes, pineapple, tuna, and peas. Drizzle generously with cheese sauce and finish with a sprinkle of fresh parsley on top.
