"Easy Tater Tot breakfast casserole with sausage and eggs - a delicious one-pan meal perfect for meal prep all week!"
Ingredients:
  • 12 ounces ground pork breakfast sausage
  • 6 ounces (1 1/2 cups) shredded cheddar cheese, plus extra to sprinkle over top
  • 8 large eggs
  • 1/2 cup (whole) milk
  • 1 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • One 32-ounce bag frozen tater tots
  • Thinly sliced chives, for serving
Instructions:
  • Preheat your oven to 350˚F.
  • Sear the sausage in a preheated 12-inch oven-safe skillet over medium heat, using a wooden spoon to break it apart until browned and fully cooked, for 5 to 7 minutes. Then, remove the skillet from heat.
  • Prepare the casserole by blending eggs, milk, salt, and pepper in a medium bowl. Spread the sausage evenly in the skillet. Top with shredded cheese, then pour the egg mixture over. Layer the Tater Tots in circular pattern starting from the edge towards the center. (Save extra Tater Tots for later.)
  • For a gooey and golden finish, bake the casserole for 35 to 40 minutes until the eggs are fully set and the cheese is melted. If you crave extra cheesiness, sprinkle with more cheese and bake for another minute or two until perfectly gooey.
  • Serve: Allow the casserole to cool briefly, then slice into wedges. Top with sliced chives and enjoy. Refrigerate any leftovers; they will stay fresh for up to 5 days.
