Delicious Tater Tot breakfast casserole, perfect for holiday mornings with the family.
Ingredients:
  • cooking spray
  • 1 pound bacon
  • 1 pound bulk pork sausage
  • 3.5 cups frozen bite-sized potato nuggets (such as Tater Tots®)
  • 0.5 cup unsalted butter, melted
  • 3 cups grated Colby-Jack cheese, divided
  • 8 large eggs
  • 2 cups milk
  • 1 small onion, chopped
  • 1.5 tablespoons prepared yellow mustard
Instructions:
  • Preheat the oven to a toasty 425 degrees F (220 degrees C), then give a gentle mist of cooking spray to a 9x12-inch baking dish.
  • Cook thick-cut bacon in a large skillet over medium-high heat, turning occasionally, until perfectly browned, for about 10 minutes. Drain on paper towels and allow to cool.
  • In the skillet, brown and crumble the sausage over medium-high heat for 5 to 7 minutes. Remove from heat and crumble the cooled bacon.
  • Spread the potato nuggets evenly at the base of the baking dish. Pour the melted butter evenly over the nuggets. Sprinkle 1 1/2 cups of Colby-Jack cheese on top.
  • Combine the eggs, milk, onion, half of the bacon and sausage, mustard, salt, and pepper in a bowl. Transfer the mixture to a baking dish and top with the remaining Colby-Jack cheese, bacon, and sausage.
  • Place the dish in the oven that's already preheated until everything is set and the cheese is gooey, usually around 1 hour. Allow it to cool for 15 minutes before enjoying.
