Transform leftover hard-boiled eggs into a delicious casserole with ease.
Ingredients:
  • 6 eggs
  • 1 tablespoon all-purpose flour
  • 2 cups heavy cream
  • salt and pepper to taste
  • ground cayenne pepper to taste
  • 0.25 cup dry bread crumbs, divided
Instructions:
  • Place eggs in a saucepan in a single layer and add enough water to cover them by 1 inch. Bring to a boil, cover, remove from heat, and let eggs sit in hot water for 15 minutes. Drain hot water, then cool eggs under cold running water.
  • Peel chilled eggs.
  • Carefully separate the yolks from the egg whites, then finely chop each one individually and set them aside.
  • Preheat your oven to 350°F (175°C).
  • Prepare a 1 1/2 quart baking dish by greasing it.
  • Gently melt butter over low heat, then stir in flour smoothly.
  • Slowly incorporate the cream while stirring continuously until it thickens. Season with salt, pepper, and cayenne according to your taste preference.
  • Combine the fluffy egg whites with the creamy sauce and gently pour the mixture into the baking dish.
  • Spread a generous layer of breadcrumbs on the bottom. Drizzle the yolks over the breadcrumbs, and top with another layer of breadcrumbs for a perfectly crispy finish.
  • Bake until golden and bubbling, for about 30-40 minutes in a preheated oven.
