Grandma's special meatloaf: a hearty blend of beef, pork, and veal with oats, spices, and a sweet glaze.
Ingredients:
  • 0.5 cup ketchup
  • 0.25 cup brown sugar
  • 2 tablespoons cider vinegar
  • 0.5 green bell pepper, chopped
  • 0.66666668653488 cup quick cooking oats
  • 2 large eggs, lightly beaten
  • 2 cloves garlic, minced
  • 2 teaspoons prepared mustard
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon seasoned salt
  • 0.5 teaspoon hot pepper sauce (such as Tabasco®)
  • 0.5 pound ground pork
  • 0.5 pound ground veal
Instructions:
  • Create a delicious glaze by thoroughly mixing ketchup, brown sugar, and cider vinegar in a bowl until fully blended.
  • Prepare the meatloaf pans by preheating the oven to 350 degrees F (175 degrees C and greasing two 9x5-inch loaf pans with cooking spray or lining them with aluminum foil for easy cleanup.
  • Place the onion and bell pepper in a microwave-safe container. Cover and microwave for 1 to 2 minutes until softened. Allow it to cool before using.
  • Combine oats, milk, eggs, garlic, mustard, Worcestershire sauce, thyme, seasoned salt, black pepper, and hot sauce in a large bowl. Mix well. Stir in cooked onion and bell pepper, then add ground beef, pork, and veal. Use gloved hands to thoroughly blend all ingredients until uniform.
  • Divide the meatloaf mixture evenly between the loaf pans and gently pat down. Brush each loaf with a quarter of the glaze, reserving the rest for later.
  • After 50 minutes in the preheated oven, take the pans out and drain the fat. Brush the remaining glaze over the loaves, then bake for an additional 10 minutes. Ensure the center reaches a minimum of 160°F (70°C) using an instant-read thermometer.
  • Take out of the oven and allow to rest for 15 minutes before cutting.
