Ingredients:
  • 2 teaspoons vegetable oil

  • 1 can (8 ounces) pineapple tidbits, drained and 1/4 cup juice reserved

  • 1/3 cup whole blanched almonds
  • 1 medium carrot, shredded ( 3/4 cup)

  • In a 10-inch skillet, heat 2 teaspoons of oil over medium-high heat. Stir frequently and cook pork for 6 to 8 minutes until no longer pink in the center.
