20-Minute Shrimp Stir-Fry with Homemade Teriyaki Sauce, Veggies, and Noodles.
Ingredients:
  • 8 ounces fresh udon noodles
  • 0.333 cup soy sauce
  • 0.25 cup mirin (Japanese sweet wine)
  • 0.25 cup sake (Japanese rice wine)
  • 4 cloves garlic, minced
  • 2 tablespoons brown sugar
  • 1 teaspoon freshly grated ginger
  • 1 tablespoon sesame oil
  • 1 pound uncooked large shrimp, peeled and deveined
  • 4 cups frozen stir-fry vegetables
  • 1 tablespoon thinly sliced green onion for garnish
  • toasted sesame seeds for garnish
Instructions:
  • Bring a large pot of salted water to a boil. Add udon and cook until they float to the top, about 3 minutes. Let them cook for an additional 2 minutes, ensuring they are not overcooked.
  • Mix soy sauce, mirin, sake, minced garlic, brown sugar, and ginger in a bowl until well combined.
  • In a wok over medium heat, sauté shrimp and vegetables in aromatic sesame oil for 2 minutes. Set aside cooked shrimp.
  • Drizzle the vegetables with teriyaki sauce, cook for an additional 3 to 4 minutes. Introduce noodles and shrimp, mix well and heat through. Serve each portion with a sprinkle of green onions and sesame seeds.
