Teriyaki-style crisp salmon with Asian greens

Ingredients:
  • 4 (200g each) salmon fillets, skin on
  • 36.40 gm olive oil
  • 300g fresh rice noodles
  • 120g Asian salad leaves, to serve
  • 82.50 ml thick teriyaki marinade
  • 24.40 gm oyster sauce
  • 42.00 gm soy sauce
  • 22.00 gm sweet chilli sauce
Instructions:
  • Mix all the ingredients in a stylish ceramic dish.
  • Coat salmon in marinade and refrigerate for 30 minutes.
  • Take salmon out of the marinade, keeping the marinade aside. Heat a large non-stick pan over medium-high heat and add half of the oil. Place 2 pieces of salmon in the pan, skin side down, and cook until crisp, about 4 to 6 minutes. Flip them over and cook for an additional 3 to 4 minutes, or until desired doneness. Transfer to a plate and repeat with the remaining oil and salmon. Cover and let it stand for 5 minutes before serving.
  • Next, pour the reserved marinade into the hot frying pan. Saute while stirring for 3 to 4 minutes until the marinade starts to boil. Add the rice noodles and mix well to coat them. Plate the noodles and place the salmon on top. Serve with fresh salad leaves on the side.
