Smoky Texas flounder with zesty lemon and dill, perfect for summer meals or a tasty snack.
Ingredients:
  • 1 whole flounder
  • 1 lemon, halved
  • ground black pepper to taste
  • 2 tablespoons chopped fresh dill
  • 1 cup wood chips, soaked
Instructions:
  • Preheat smoker to 350 degrees F (175 degrees C. If you don't have a smoker, set up grill for indirect heat. Gas grill owners, check out a different recipe!
  • Prepare the fresh flounder by cleaning and scaling it, leaving the head on if desired. Make 3 or 4 diagonal slits on the body and insert thin lemon slices. Coat the fish lightly with olive oil and squeeze lemon juice over it, then season with black pepper. Press 1 tablespoon of dill into the slits and firmly insert lemon slices. Wrap the flounder in a large piece of foil, leaving it open for now with the sides folded high.
  • Lay the fish on the grill or smoker and add a couple of handfuls of soaked wood chips onto the coals. Close the lid and smoke for around 10 minutes until infused with smoky flavor. Keep smoking until the fish is cooked through and flakes easily with a fork.
  • Use the foil handle to lift the fish off the grill and sprinkle with the remaining fresh dill for a final touch.
