Tender chicken cooked in zesty orange sauce, served with noodles and a fresh salad for an effortless meal.
Ingredients:
  • 2 tablespoons olive oil
  • 3 carrots, cut into matchsticks
  • 0.5 teaspoon minced fresh ginger root
  • 1 clove garlic, minced
  • 2 skinless, boneless chicken breast halves, cut into small pieces
  • 0.5 cup water
  • 0.5 cup peanuts
  • 0.33333334326744 cup orange juice
  • 0.33333334326744 cup soy sauce
  • 0.33333334326744 cup brown sugar
  • 2 tablespoons ketchup
  • 1 teaspoon crushed red pepper flakes
  • 2 tablespoons cornstarch
Instructions:
  • In a large skillet over medium heat, sauté carrots, ginger, and garlic in 2 tablespoons of olive oil until carrots are slightly softened, about 5 minutes. Transfer the carrot mixture to a bowl and add the remaining 2 tablespoons of olive oil to the skillet.
  • Sauté chicken in sizzling olive oil until fully cooked, approximately 10 minutes. Mix in carrots, water, peanuts, orange juice, soy sauce, brown sugar, ketchup, and red pepper flakes. Stir well. Cover and simmer until sugar melts, around 5 minutes.
  • Take out 1/4 cup of sauce from the skillet. Whisk in cornstarch until smooth. Pour the cornstarch mixture back into the chicken and sauce. Cook until the sauce slightly thickens, approximately 5 more minutes.
