Spicy Thai jalapeño poppers: a quick and versatile party hit.
Ingredients:
  • 1 can (26 oz) pickled whole jalapeño chiles, drained, rinsed
  • 4 oz (half of 8-oz package) cream cheese, softened
  • 1/2 cup creamy peanut butter
  • 1/4 cup packed brown sugar
  • 1/3 cup honey roasted peanuts, finely chopped
Instructions:
  • Using a small sharp knife, halve each chile, leaving the stem on one half. Remove the seeds and rinse the chiles. Drain them cut side down on a paper towel.
  • Prepare the cream cheese by placing it in a resealable freezer plastic bag, then seal it and snip off a 1/2 inch corner. In a small bowl, combine the peanut butter and brown sugar. Transfer this mixture into another resealable freezer plastic bag, seal it, and cut off a 1/2 inch corner as well.
  • Fill each jalapeño half with approximately 1/2 teaspoon of cream cheese from the squeezed bag. Follow by filling each jalapeño with the peanut butter mixture. Dip the top of the peanut butter filling into chopped peanuts. Arrange the stuffed jalapeños on a platter and serve at room temperature.
