Thai-inspired fried rice with ground chicken, pineapple, and cilantro - a deliciously sweet and savory family favorite!
Ingredients:
  • 1 large skinless, boneless chicken breast, ground
  • 0.25 cup butter, divided
  • 1 red onion, chopped
  • 1 tablespoon garlic, minced
  • 0.5 cup roughly chopped pineapple, drained and juice reserved
  • 4 cups cooked white rice, or more to taste
  • 0.5 cup chopped fresh cilantro, divided
  • 0.25 cup sweet and sour sauce
  • 3 tablespoons teriyaki sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons white sugar
  • salt and ground black pepper to taste
Instructions:
  • 1. Preheat a small skillet over medium heat. Saute chicken until cooked through, about 5 minutes. Use an instant-read thermometer to ensure chicken reaches 165 degrees F (74 degrees C).
  • In a large wok, melt 2 tablespoons of butter over medium heat. Add onion and garlic and cook until softened and translucent, about 5 minutes. Mix in cooked chicken, pineapple, and 3 tablespoons pineapple juice for 1 to 2 minutes. Stir in rice, 4 tablespoons cilantro, and the remaining 2 tablespoons of butter; blend well for about 5 minutes.
  • Combine sweet and sour sauce, teriyaki sauce, soy sauce, sugar, salt, and pepper with the rice mixture. Cook and stir for 5 to 8 minutes. Add the remaining 4 tablespoons of cilantro and mix for 1 to 2 minutes.
