Thanksgiving-ready individual onion and bacon stuffing muffins.
Ingredients:
  • 1 pound bacon, cut into 1/2-inch pieces
  • 0.5 cup butter
  • 1 cup finely chopped onion
  • 1 cup chopped celery
  • 2 tablespoons poultry seasoning (such as Bell's®)
  • 2 loaves day-old white bread, torn into small pieces
  • 2 eggs, beaten
Instructions:
  • Heat your oven to 400 degrees F (200 degrees C).
  • In a sizable skillet over medium-high heat, sizzle the bacon until tender yet not crisped, for about 5 to 10 minutes. Then, let the bacon slices rest on paper towels to absorb excess grease, keeping the flavorful bacon drippings in the skillet.
  • In a separate skillet over medium-high heat, melt the butter until sizzling. Sauté the onion and celery until tender for about 5 minutes. Mix in the cooked bacon and poultry seasoning, then transfer everything to a large bowl.
  • Combine torn bread pieces with the flavorful bacon and onion mixture in a bowl, then gently incorporate the eggs. Fill the muffin cups with the delicious bread mixture.
  • Bake until the tops are crispy, approximately 25 minutes in a preheated oven.
