Turn Thanksgiving leftovers into crispy, flavorful egg rolls.
Ingredients:
  • 2 cups canola oil for frying, or as needed
  • 1.5 cups cubed cooked turkey
  • 0.5 cup turkey gravy
  • 1 (12 ounce) package egg roll wrappers
  • 1.5 cups mashed cooked potatoes
  • 1.5 cups prepared stuffing
  • 0.5 cup prepared whole-berry cranberry sauce
Instructions:
  • Heat oil in a pan on the stovetop until it reaches 375°F (190°C).
  • Combine the turkey and 1/2 cup of gravy in a bowl, ensuring they are fully mixed.
  • Place an egg roll wrapper on a plate or clean cutting board in a diamond shape. Fill a small bowl with water. Arrange 2 tablespoons of mashed potatoes, 2 tablespoons of turkey-gravy mixture, 2 tablespoons of stuffing, and 1/2 tablespoon of cranberry sauce in a vertical line in the center of the wrapper.
  • Moisten the edges of the egg roll wrapper with water using your fingertips. Fold the top and bottom corners over the filling, then fold in the left corner and roll tightly from left to right. Moisten your fingers with water and lightly seal the edges of the wrapper together. Repeat with the remaining wrappers and filling.
  • Fry egg rolls in hot oil in batches, flipping occasionally, until golden brown and cooked through, about 3 to 4 minutes. Place on paper towel-lined plate to drain and cool.
