Thanksgiving Leftover Egg Rolls

Create delicious Thanksgiving turkey egg rolls using leftover ingredients for a fun twist.
Ingredients:
  • 1.3333333730698 cups coarsely chopped leftover turkey
  • 1 cup leftover mashed potatoes
  • 0.66666668653488 cup leftover green bean casserole
  • 0.5 (12 ounce) package egg roll wrappers
  • 1.25 cups leftover turkey gravy
  • 1 tablespoon leftover cranberry sauce
  • 2 cups vegetable oil for frying
Instructions:
  • Mix together tender turkey, creamy mashed potatoes, flavorful green bean casserole, a pinch of salt, and a dash of pepper in a bowl. Stir until all ingredients are perfectly blended.
  • Lay an egg roll wrapper on a clean surface with one corner pointing towards you to form a diamond shape. Spoon 3 tablespoons of filling onto the wrapper. Fold the bottom half of the wrapper up and tightly fold in the sides. Roll gently and seal with a few drops of water. Repeat with the rest of the wrappers and filling.
  • In a small saucepan, combine the gravy and cranberry sauce. Heat gently on low heat until warmed through and ready to serve.
  • Heat oil in a deep-fryer or large saucepan until it reaches 350 degrees F (175 degrees C).
  • Fry 4 egg rolls in hot oil until crispy and golden, for around 4 minutes. Use tongs to transfer them to a paper towel-lined plate. Repeat with the rest of the egg rolls. Serve with gravy on the side for dipping.
