Create savory Thanksgiving leftover muffins for a portable, flavorful meal option.
Ingredients:
  • nonstick cooking spray
  • 4 cups crumbled leftover stuffing
  • 1 cup chopped cooked turkey
  • 0.75 cup frozen corn kernels, thawed
  • 1 tablespoon chicken broth, or as needed
  • 12 (1/2 inch) cubes Cheddar cheese
  • 5 eggs
  • 2 tablespoons chicken broth
  • salt and freshly ground black pepper to taste
  • 0.5 cup cranberry sauce
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and grease the muffin tin cups with cooking spray.
  • Mix stuffing, turkey, and corn in a large bowl with care. If the mixture seems dry, slowly incorporate 1 tablespoon of chicken broth until it reaches a moist consistency. Divide the mixture evenly into the 12 muffin cups and place a cube of Cheddar cheese in the center of each.
  • In a cup, mix together eggs, 2 tablespoons chicken broth, salt, and pepper until smooth. Pour the egg mixture evenly into the cups, ensuring it doesn't fully cover the stuffing as it will puff up beautifully as it bakes.
  • Bake in the oven until muffins are golden brown and slightly crisp on top, about 25-30 minutes.
  • Let the muffins cool for 5 minutes, then use a knife to gently release them from the pan. Serve them warm with a dollop of cranberry sauce on top.
