Transform Thanksgiving stuffing leftovers into savory muffins - yields 4, easily scalable.
Ingredients:
  • 1 large egg
  • 2 cups leftover stuffing
  • 1.5 ounces Cheddar cheese, divided
Instructions:
  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, vigorously whisk the egg until it turns foamy. Next, incorporate the leftover stuffing into the mixture. Cube 4 pieces of Cheddar cheese into 1/2-inch pieces and set them aside. Shred the rest of the Cheddar cheese and combine it with the stuffing mixture. Thoroughly mix all ingredients until well combined.
  • Divide the stuffing mixture between 4 muffin cups, press an indentation with your finger, place a cube of cheese, and top with the remaining mixture.
  • Bake in the preheated oven for about 27 minutes or until the tops spring back when lightly pressed. Let them cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
