Delightful mango pudding with fresh fruits, butter, eggs, vanilla, and sugar - a crowd-pleaser!
Ingredients:
  • 2.25 pounds mango slices
  • 1 cup white sugar, divided
  • 0.5 cup butter
  • 1.5 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.25 cup milk
Instructions:
  • Preheat your oven to 325°F (165°C).
  • Lay mango slices on the bottom of an 8x8-inch square pan and generously sprinkle with 1/2 cup sugar.
  • In a bowl, blend together butter and sugar until smooth using a fork. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  • Combine and sift flour and baking powder in a bowl. Pour the flour mixture into the butter mixture and stir until well combined. Slowly stir in milk until smooth, then spoon the mixture over the mangos.
  • Bake in the preheated oven for approximately 1 hour or until a knife inserted in the center comes out clean.
