The best buttermilk onion rings

Ingredients:
  • 3 onions
  • 100 g plain flour
  • 300 ml buttermilk
  • 300 ml fine cornmeal
  • cayenne pepper
  • paprika
  • 2 litres sunflower oil
Instructions:
  • The day before serving, slice the onions into 3mm rings, arrange on a tray lined with paper towel, and refrigerate overnight. When ready to cook, season flour with sea salt and black pepper on a plate. Place buttermilk in a shallow bowl and mix cayenne pepper and paprika into cornmeal on another plate. Heat oil in a pan until 180°C. Dredge onion rings in flour, then buttermilk, and coat in cornmeal. Fry in batches until crispy, about 1 minute. Drain on paper towels.
