Upgrade your Anzac biscuit game with this chewy twist on the classic recipe, featuring extra coconut, golden syrup, and butter for the perfect texture.
Ingredients:
  • 110g rolled oats
  • 110g desiccated coconut
  • 150g plain flour
  • 150g unsalted butter
  • 90g golden syrup
  • 220g raw sugar
  • 1.25 gm Bicarbonate Soda
Instructions:
  • 1. Preheat the oven to 180C. In a bowl, mix oats, coconut, flour, and a pinch of salt. Set aside. In a saucepan over medium heat, melt the butter with golden syrup and sugar, stirring until well combined. Simmer for 1-2 minutes until sugar dissolves. Remove from heat, cool slightly, and stir in bicarb soda diluted in 1 tablespoon of water. Pour over the oat mixture.
  • Mix together the butter and oat mixture with a wooden spoon. Roll the mixture into 24 equal-sized balls using 1 tablespoon each. Place the balls onto two baking paper-lined trays, ensuring there is 3cm of space between each one.
  • Gently press down on the biscuits and bake for 10-12 minutes until the top tray turns slightly golden. Rotate trays and bake for another 6-8 minutes until all biscuits are golden brown. Let the biscuits cool completely on a wire rack.
