Irresistible gingerbread cookies for all ages.
Ingredients:
  • 125g Butter, chopped
  • 59.40 gm brown sugar
  • 110.55 gm golden syrup
  • 1 egg
  • 625.00 ml plain flour
  • 10.00 gm ground ginger
  • 5.00 gm cinnamon
  • 1/4 tsp ground cloves
  • 2.50 gm bicarbonate of soda
  • 1 egg white
  • 300.00 gm pure icing sugar, sifted
Instructions:
  • Combine butter, sugar, and golden syrup in a saucepan and stir until silky smooth. Allow to cool slightly.
  • In a large bowl, beat together eggs and butter until smooth. Add flour, spices, and baking soda, then mix until a smooth dough forms. Shape the dough into a disc, cover with cling wrap, and chill in the refrigerator for 30-40 minutes until firm.
  • Roll out the dough to a ½cm thickness on a floured surface. Use 10-12cm gingerbread people cutters to shape the dough, then transfer them with a lifter onto lightly buttered baking trays. Bake at 180C for 8-10 minutes until cooked and lightly browned. Allow them to cool on the trays for 5 minutes before moving them to a wire rack to cool completely.
  • Whisk egg white until frothy, then slowly mix in powdered sugar until smooth and perfect for piping. Transfer to a piping bag and adorn your cooled gingerbread with beautiful designs.
