Creamy Mexican rice drink with cinnamon, served over ice for a refreshing taste of summer.
Ingredients:
  • 2 quarts hot water
  • 0.5 cup white sugar
  • 1.5 teaspoons ground cinnamon
  • 1 cup long grain rice
  • 1 cup milk
  • ice cubes, for serving
Instructions:
  • Combine sugar, cinnamon, and rice in hot water, stirring until sugar dissolves. Cover and let sit at room temperature for at least 3 hours, or better yet, overnight.
  • Combine milk with the mixture and blend it using a hand blender or a standing blender until the rice reaches a fine sand-like consistency. Strain the mixture through cheesecloth or a fine strainer. Serve chilled over ice.
