"Classic Key Lime Pie made with tangy lime filling in a buttery graham cracker crust, topped with fluffy whipped cream. Can use key limes or regular limes."
Ingredients:
  • For the Crust:
  • 1 1/2 cups finely ground graham crackers (from about 9 crackers, 145 g)
  • 1/4 cup butter, melted
  • 3 tablespoons white granulated sugar
  • For the Filling:
  • 1 tablespoon lime zest for filling plus 1/2 teaspoon for the topping
  • 3 egg yolks
  • 1 14-ounce can sweetened condensed milk
  • 1/2 cup lime juice (from about 20 key limes or 4 to 6 regular limes)
  • For the Whipped cream:
  • 3/4 cup heavy whipping cream
  • 1 tablespoon powdered sugar
  • 1/8 teaspoon vanilla extract
Instructions:
  • Preheat your oven to 350°F.
  • Prepare the graham cracker crust: Combine ground graham crackers, melted butter, and sugar in a bowl. Press the mixture into a 9-inch pie dish, ensuring an even layer all over. Use the bottom of a measuring cup or drinking glass to compact the crust on the bottom and sides of the dish. Bake at 350°F for 10 minutes; then, set aside once done.
  • Prepare the lime filling by combining egg yolks in a medium bowl. Use an electric mixer or whisk to beat the yolks until they thicken and become lighter in color, about 3 minutes. Add 1 tablespoon lime zest and sweetened condensed milk, beat for another 2 minutes. Finally, whisk in the lime juice until smooth.
  • Bake: Pour the filling into the graham cracker crust and bake at 350°F on the middle rack for just 10 minutes until the filling is barely set; it should have a slight jiggle in the center like Jell-O.
  • Chill: Take out of the oven and cool to room temperature, then refrigerate for at least an hour or overnight.
  • Prepare the whipped cream: In a chilled bowl, combine heavy whipping cream, powdered sugar (sifted), and vanilla. Whip with an electric mixer on high speed until soft peaks form. Be careful not to over-whip. Spread the whipped cream over the chilled key lime pie, sprinkle with extra lime zest, and chill until serving.
