Indulgent vanilla panna cotta with vibrant blueberry syrup is a show-stopping make-ahead dessert.
Ingredients:
  • 1 cup white sugar, or more to taste
  • 2 vanilla beans
  • 2.5 cups heavy whipping cream
  • 1 cup white sugar
  • 1 tablespoon unflavored gelatin
  • 0.5 cup water
  • 1 quart buttermilk
  • 8 ounces fresh blueberries
  • 0.5 cup orange juice
Instructions:
  • Arrange sixteen 4-ounce ramekins neatly on a baking sheet with a rim.
  • Carefully slice the vanilla bean in half. Use the flat side of your knife to scrape out the seeds from both halves.
  • Fill a large pot halfway with water and gently simmer over medium heat.
  • In a large heatproof bowl, mix together vanilla pods, scraped beans, heavy cream, and 1 cup sugar until thoroughly combined. Place the bowl over a pot of simmering water and whisk gently until the cream mixture is just warm and the sugar is dissolved, around 5 minutes.
  • Strain the cream mixture using a fine-mesh strainer, discarding the hot water.
  • Sprinkle gelatin over 1/2 cup of water in a small bowl and stir briskly until fully dissolved. Pour gelatin into the cream mixture and whisk well. Allow it to cool for about 20 minutes.
  • Thoroughly combine buttermilk with cream mixture, then pour into ramekins. Cover with plastic wrap and refrigerate until set, for at least 6 hours or preferably overnight.
  • In a large saucepan over medium heat, toast blueberries until they release juices, approximately 5 minutes. Add orange juice and 1 cup of sugar, then simmer until reduced by half, around 10 minutes. Allow mixture to cool and thicken into a syrup, about 30 minutes.
  • Gently slide a thin knife around the edges of each ramekin. Flip the panna cotta onto serving plates and garnish with blueberry topping before serving.
