Australian Pavlova: Baked meringue crust topped with sweet whipped cream and fresh juicy berries.
Ingredients:
  • 1 cup white sugar, divided
  • 1 tablespoon cornstarch
  • 3 large egg whites
  • 1 teaspoon lemon juice
  • 1.25 cups heavy whipping cream
  • 0.5 cup confectioners' sugar
  • 1 pint fresh strawberries
Instructions:
  • Preheat the oven to 300°F (150°C), then line a rimmed baking sheet with parchment paper and draw a 9-inch circle in the center of the paper.
  • Combine 1/4 cup sugar and cornstarch, whisking until well mixed in a small bowl.
  • Whisk egg whites in a glass, metal, or ceramic bowl until soft peaks form. Slowly incorporate the remaining 3/4 cup of sugar while whisking until sugar is fully dissolved and stiff peaks form. Carefully fold in the cornstarch mixture and lemon juice.
  • Evenly spread a 1/4-inch layer of meringue on the baking sheet to cover the circle. Then, pipe or spoon the remaining meringue to create a raised edge around the circle, forming a shallow bowl. Add decorative swirls if you like.
  • Bake in the preheated oven for 1 hour. Turn off the oven and allow the meringue to rest inside undisturbed for 30 minutes. The meringue should be crisp on the outside and slightly soft inside when ready.
  • Whip cream and confectioners sugar in a mixing bowl with an electric mixer until fluffy. Spread over meringue base and layer strawberries on top.
