Cinnamon-sugar coated pecans - reminiscent of ballpark roasted pecans.
Ingredients:
  • 1 egg white
  • 1.5 pounds pecan halves
  • 0.75 cup white sugar
  • 0.25 cup light brown sugar
  • 1.25 teaspoons ground cinnamon
  • 2 tablespoons unsalted butter, softened
Instructions:
  • Preheat the oven to 300°F (150°C).
  • Whisk egg whites in a large glass or metal mixing bowl until soft peaks form – they should hold their shape but have a gentle curve at the tip when the beater is lifted.
  • Incorporate the pecan halves into the egg white.
  • Combine the white sugar, brown sugar, and cinnamon in a bowl; mix into the pecan and egg white mixture until well combined.
  • Spread a layer of softened butter across the bottom of a jelly roll pan.
  • Evenly distribute the pecan mixture in the pan.
  • Roast in the oven until golden and crispy, turning occasionally, for 45-60 minutes.
