Deliciously quick spaghetti carbonara with rich sauce and savory pancetta - taste Italy in just 30 minutes!
Ingredients:
  • 400g spaghetti
  • 200g sliced Gourmet Selection Pancetta, cut into 1cm-wide strips
  • 2 garlic cloves, finely chopped
  • 3 Free Range Eggs, plus 1 extra yolk
  • 100ml thickened cream
  • 50g parmesan
  • 40.00 ml chopped flat-leaf parsley leaves
Instructions:
  • Boil pasta as directed on the package. In a separate pan, crisp pancetta in oil over medium heat. Stir in garlic for 30 seconds before removing pan from heat.
  • In a bowl, combine eggs, yolk, cream, and parmesan. Season with salt and pepper, then gently mix with a fork. Drain cooked pasta, return to the pan, and quickly stir in the egg and pancetta mixtures along with parsley. Toss everything together to combine - the heat from the pasta will slightly cook the egg, creating a creamy sauce. Serve immediately with a sprinkle of extra parmesan on top.
