Indulgent spaghetti casserole with creamy sour cream, savory beef, and gooey cheese for a delicious pasta night upgrade.
Ingredients:
  • cooking spray
  • 1 (16 ounce) package spaghetti
  • 1 (8 ounce) package cream cheese, at room temperature
  • 1 (16 ounce) container fat-free sour cream
  • 2 cups shredded mozzarella cheese, divided
  • 2 tablespoons olive oil
  • 2 pounds ground beef
  • 0.25 cup chopped onion
  • 2 teaspoons finely chopped garlic
  • 2 teaspoons Italian seasoning
  • salt and black pepper to taste
  • ½ teaspoon ground black pepper
  • 2 (26.5 ounce) cans meatless spaghetti sauce
  • 0.5 cup Parmesan cheese
Instructions:
  • - Preheat the oven to 350 degrees F (175 degrees C) and generously coat a 9x13-inch baking dish with cooking spray. Boil spaghetti in salted water until al dente, about 8 to 10 minutes. Drain and set aside.
  • Combine cream cheese, sour cream, and 1 cup of mozzarella cheese, stirring until well mixed; set aside while pasta is cooking.
  • In a large high-sided skillet, heat olive oil over medium-high heat. Add beef in large chunks and cook without stirring until lightly browned, approximately 2 minutes.
  • Sauté onion, garlic, Italian seasoning, salt, and pepper. Cook until meat is almost done, about 3 minutes, breaking it up with a wooden spoon. Tilt the pan to pool grease to one side, remove with a large spoon once it cools.
  • Combine marinara with the beef in a skillet, stirring until mixed. Then add the spaghetti and fold gently until evenly coated in the delicious sauce.
  • Place half of the pasta mixture into the baking dish. Evenly spread the sour cream mixture over the pasta layer, then add the rest of the pasta mixture on top.
  • Evenly scatter the remaining cup of mozzarella over the spaghetti mixture. Cover lightly with aluminum foil and set the baking dish on a baking sheet.
  • Bake in a preheated oven for about 30 minutes until the cheese has melted. Remove the aluminum foil, sprinkle the top with Parmesan cheese, and switch the oven to broil.
  • Broil until the cheese is golden brown, about 3-4 minutes. Top with freshly chopped parsley and enjoy!
