Savory chili-cheese burger biscuit bake with crispy onion rings and corn chips - a crowd-pleasing meal!
Ingredients:
  • 2 1/4 cups Original Bisquick™ mix
  • 2/3 cup milk
  • 1 lb ground beef (preferably 80/20 fat content)
  • Salt and pepper, to taste
  • 1 cup leftover chili, hot (I used Cincinnati Chili)
  • 10 to 12 frozen onions rings (if desired), cooked as directed on package
  • 1 cup corn chips, if desired
  • 2 tablespoons butter
  • 2 tablespoons Gold Medal™ all-purpose flour
  • 2 cups milk
  • 1/4 teaspoon ground mustard
  • 1/2 cup shredded provolone cheese (2 oz)
  • 1 1/2 cups shredded sharp white Cheddar cheese (6 oz)
Instructions:
  • Preheat the oven to 450°F. Mix the ingredients until a soft dough forms. Transfer the dough to a surface dusted with Bisquick mix. Knead it 10 times, then roll it out to 1/2 inch thickness. Cut out biscuits using a 2 1/2-inch cutter. Arrange them on an ungreased cookie sheet. Bake for 8 to 10 minutes or until golden brown.
  • Preheat gas or charcoal grill. Season beef with salt and pepper in a large bowl and shape into 4 patties. Grill over medium-high heat to your liking, about 4 minutes per side based on thickness. Keep warm after grilling.
  • In a 1-quart saucepan over medium-high heat, melt butter. Add flour and cook for about 1 minute. Whisk in milk and mustard until bubbling and thickened for about 2 minutes. Remove from heat and gently stir in provolone and Cheddar cheese with a pinch of salt and pepper until melted.
  • Split biscuits in half, place a burger patty on the bottom of each, add about 1/4 cup of hot chili, drizzle warm cheese sauce, add crispy onion rings and corn chips, cover with the top half of the biscuit, and savor every bite!
