Master the perfect oil to vinegar ratio for 3 delicious vinaigrettes by Michael Ruhlman.
Instructions:
  • In a bowl, whisk together 2 tablespoons sherry vinegar, 1 tablespoon minced shallot, salt, and pepper. Gradually whisk in 6 tablespoons extra virgin olive oil until combined.
  • Combine sherry vinegar, minced shallot, salt, pepper, and mustard in a bowl. Whisk or stir to soften the shallot, then slowly drizzle in the olive oil while whisking. Stir in minced tarragon right before serving.
  • In a bowl, combine 2 tablespoons sherry vinegar, 1 tablespoon minced shallot, salt, pepper, and 1 teaspoon whole-grain or Dijon mustard. Whisk while slowly drizzling in 6 tablespoons extra virgin olive oil. Stir in 1 tablespoon minced tarragon, 1 hard-cooked egg (finely chopped), 1 tablespoon chopped cornichons, and 2 teaspoons chopped capers.
