Christmas essential side dish for any main course.
Ingredients:
  • 12 (about 2kg) desiree potatoes, peeled
  • 3 tsp thyme leaves
  • 2 garlic cloves, finely chopped
Instructions:
  • Heat the oven to 200°C.
  • Cut each potato in half lengthwise and lay them flat side down on a cutting board. Make thin cuts 5mm apart, going two-thirds of the way through. Transfer to a large bowl and repeat with the rest of the potatoes.
  • Drizzle olive oil and sprinkle with thyme and garlic. Season generously with salt and pepper. Toss gently to mix. Transfer to a large roasting pan. Bake, turning occasionally, for 45 minutes until golden brown and crispy. Serve hot straight from the oven.
