Trendy Northern Chinese salad with peanuts and choice of shrimp or tofu for protein.
Ingredients:
  • 0.5 English cucumber
  • 1.25 teaspoons salt, divided
  • 3 large green onions, white and tender green parts only
  • 1 large green bell pepper
  • 1 large red bell pepper
  • 2 tablespoons unseasoned rice vinegar
  • 1.5 tablespoons toasted sesame oil
  • 0.25 teaspoon crushed red pepper flakes
  • 2 cups chopped fresh cilantro, leaves and stems
Instructions:
  • Halve the cucumber lengthwise, remove seeds gently with a spoon, then cut into 2-inch pieces. Slice each piece into thin, uniform strips and transfer to a bowl. Toss with 1 teaspoon of salt and let sit for 15 minutes.
  • Slice the green onions and bell peppers into slender, equal strips, approximately 2 inches in length.
  • Place cucumber in a fine-mesh sieve, rinse, and allow to drain thoroughly. In a large bowl, combine vinegar, sesame oil, crushed red pepper, and remaining 1/4 teaspoon salt. Add drained cucumber, green onions, bell peppers, and cilantro, and toss until well mixed.
